About "sakescape"

The sakescape

Visit any sake brewery, ask any master brewer and you will learn that sake is created from four simple ingredients: water, rice, yeast and koji.
Yet each bottle, each drop, is a unique expression of the time, place, and hands in which it was created
- The sakescape.

An interplay of

【natural landscape】
- the rice fields, mountain-streams, ocean, seasons, produce;
【physical structures】
- the brewery, towns, shrines, temples, their architecture and treasures within;
【people】
- the brewers, farmers, fishermen; and their cultural heritage
- history, tradition and spirituality.

sakescape Miyagi

In Miyagi, one important figure stands at the heart of the sakescape - Date Masamune - feudal lord of what is now modern-day Sendai City and its surrounds.
Date was much more than a samurai. He was a champion of culture and patron of the arts.
It was Date who first introduced sake brewing to the region.
His deep appreciation for cuisine and aesthetics was reflected in a unique philosophy of hospitality, and legacy of ‘Date culture’ which continues to permeate every inch of the sakescape.
